Lemon Salmon Gratin

Ingredients for 5 servings:

  • 750 g salmon fillet(s)
  • 1 lemon(s)
  • 1 cup of cream
  • 1 cup crème fraîche
  • dill
  • Salt
  • pepper
  • 1 tsp vegetable broth
  • 2 tsp capers
  • possibly wine, white

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 200°C (400°F). Wash the salmon, pat dry, and divide into portions. Season with salt and pepper. Layer the fish in a baking dish. Mix the cream and crème fraîche, season with vegetable stock, salt, pepper, and dill. Spread over the fish. Peel the lemons, remove the white pith (otherwise it will be bitter), and cut into thin slices. Arrange the lemon slices over the salmon. Sprinkle with capers. Bake in the oven for 30-40 minutes. Serve with rice and salad. Tip: If desired, you can add a splash of white wine to the cream.
