Ingredients for 2 servings:
- 2 chicken breast fillets
- some flour
- 2 tbsp olive oil for frying or rapeseed oil
- 100 ml cream
- 100 ml chicken broth
- ½ tsp Italian seasoning
- 40 g Parmesan, grated
- 2 cloves garlic
- 75 g leaf spinach, frozen
- 60 g tomatoes, dried in oil
- salt and pepper
- possibly sauce thickener

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes
well seasoned and quick to make
Wash the chicken breasts and dry thoroughly. Cut each piece diagonally into four pieces and pound them slightly flat. Drain the tomatoes well. Finely chop the spinach and tomatoes. Crush the garlic cloves. Mix with cream, a light chicken broth, and the seasoning mix. Heat a pan with oil, lightly season the chicken pieces, flour them, and fry for about 2 minutes on each side, then remove from the pan. Add the cream mixture to the pan, stir in the Parmesan cheese, and thicken the sauce a little with a sauce thickener, if desired. Season to taste. Add the fried chicken pieces and heat gently with the lid closed for about 3-4 minutes. Serve with rice or pasta.
