Ingredients for 4 servings:
- 500 g peas, frozen
- 750 ml vegetable stock
- 2 tbsp cornstarch
- 250 ml sparkling wine
- 250 ml sweet cream
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Cook the peas in the broth for 5 minutes. Scoop the peas out of the soup, puree them, and return them to the soup. Mix the starch with a little water to thicken the soup. Season the soup with salt and pepper and pour into a soup tureen for a more appealing look. Whip the cream until stiff. At the table, carefully stir the sparkling wine and cream into the soup and enjoy immediately.
