Leftover bread casserole or pan

Ingredients for 3 servings:

  • 100 g stale bread or rolls
  • 1 bell pepper(s)
  • 4 vine tomatoes
  • Leftovers from other vegetables, e.g. chicory, blanched carrots, kohlrabi, etc.
  • 1 onion(s)
  • 3 eggs
  • 100 g mozzarella or other grated cheese
  • 100 g feta cheese, diced
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Leftovers, e.g. sausage leftovers, Leberkäse, Wiener, Chorizo, cooked ham

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Use of leftover bread, rolls, sausage and vegetables

The quantities are only estimated and can easily be adjusted depending on the leftover ingredients you have on hand. Bread or rolls should still be sliceable; if not, moisten them slightly and place them briefly in the microwave. For the casserole version, preheat the oven to 200°C (top/bottom heat). Dice the leftover bread and fry them lightly in a pan until they start to brown. Add the sausage or ham and fry them as well. Add the vegetables and continue frying until everything is really hot. In the meantime, crack the eggs into a bowl and mix until smooth. Pour the hot frying mixture into an ovenproof dish. Stir in the feta, pour the eggs over the top, mix briefly, and sprinkle everything with the grated cheese. Place the casserole dish in the preheated oven and bake at around 180°C (convection oven) for around 30 minutes. Alternatively, you can leave the browned ingredients, along with the feta and eggs, in the pan, put the lid on, and fry over low heat until the eggs are set. Stir carefully from time to time so that the mixture does not stick to the bottom.
