Quick chicken casserole

Ingredients for 4 servings:

  • 1 ½ kg potatoes
  • 500 g chopped chicken
  • 300 ml chicken broth
  • 75 g Gouda, grated
  • 1 large onion(s), finely chopped
  • 2 carrots, finely chopped
  • 2 tbsp flour
  • 1 tbsp tomato paste
  • some thyme leaves, freshly chopped
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Peel the potatoes, boil them, and mash them. Brown the chicken, onion, and carrots in a saucepan for 5 minutes, stirring frequently. Then add the flour and cook on low heat for a further 2 minutes. Add the tomato paste and chicken stock and simmer for a further 15 minutes, stirring frequently. Season with salt, pepper, and thyme to your desired flavor. Grease a baking dish with butter. Pour the finished chicken mixture into the baking dish and let it cool slightly. Preheat the oven to 200°C. Spread the mashed potatoes over the mixture and sprinkle with cheese. Bake the casserole in the oven for 20 minutes until golden brown. If desired, you can also add various ingredients such as herbs and garlic.
