Ingredients for 4 servings:
- 2 onions, diced
- 1 cucumber(s), peeled and deseeded; diced
- 5 ml oil, for frying
- ½ liter broth
- 250 ml cream
- 2 apples, peeled, pitted and diced
- Salt and pepper, to taste
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Sauté the onion, cucumber, and apple in the oil, deglaze with the broth and reduce by 1/3. Add the cream and bring back to a boil, then puree with a hand blender. Refine this soup with fresh chili or garnish with diced fish or shellfish.
