Cucumber-Apple Foam Soup

Ingredients for 4 servings:

  • 2 onions, diced
  • 1 cucumber(s), peeled and deseeded; diced
  • 5 ml oil, for frying
  • ½ liter broth
  • 250 ml cream
  • 2 apples, peeled, pitted and diced
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onion, cucumber, and apple in the oil, deglaze with the broth and reduce by 1/3. Add the cream and bring back to a boil, then puree with a hand blender. Refine this soup with fresh chili or garnish with diced fish or shellfish.
