Ingredients for 1 servings:
- 125 g butter
- 125 g sugar
- 2 eggs
- 125 g flour
- 2 tsp baking powder
- 4 tsp coffee, strong
- 2 tbsp powdered sugar
- 500 g mascarpone
- 160 g sugar
- 3 tbsp Amaretto
- 2 tbsp dark chocolate, finely grated
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes
Mix the butter, sugar, eggs, flour, and baking powder in a bowl with a hand mixer until creamy. Line a muffin tin with paper baking cups (approx. 16) and fill the cups about halfway with the batter. Bake in a preheated oven at 170 degrees Celsius (convection oven) for 15-20 minutes. For the coffee syrup, gently heat the powdered sugar and 4 tablespoons of coffee in a saucepan and stir until the powdered sugar has dissolved. Then let it boil for 1-2 minutes, then remove from the heat and set aside. Brush the warm cupcakes with the coffee syrup (3-4 brush strokes or lightly pierce the surface of the cupcakes and spread 1 teaspoon of syrup on each), set aside, and let cool. For the cream, mix 500g of mascarpone (I also like to use 250g mascarpone and 250g low-fat quark – the cream is less rich and tastes fresher, it’s a matter of taste) with the sugar and amaretto and spread it on the cupcakes. Then, using a stencil, spread the grated chocolate on the cupcakes.
