Chicken and broccoli casserole

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s)
  • 250 g mushrooms
  • 1 onion(s), cut into rings
  • 1 spring onion(s)
  • ½ liter vegetable broth
  • 200 g processed cheese, light
  • 500 g broccoli
  • n. B. Cheese for topping
  • oil
  • some flour to bind
  • salt and pepper
  • Herbs of Provence

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Food combining

Brown the chicken breast fillets and season with salt and pepper. Slice the mushrooms, fry them in the oil with the onion rings, and season with salt, pepper, and Provençal herbs. Blanch the broccoli florets. Prepare a cheese sauce. Slice the spring onions and sauté them in a little oil, then deglaze with the vegetable stock. Stir in the cream cheese. Thicken with a little flour to prevent the sauce from becoming too runny. Place the chicken fillets in a baking dish, add the mushrooms and broccoli florets, and pour the cheese sauce over them. Sprinkle with cheese and bake in the oven at 200°C for about 20 minutes.
