Ingredients for 4 servings:
- 125 g butter
- 125 g honey
- 250 ml milk
- 3 egg yolks
- 1 pinch of salt
- ½ tsp baking powder
- 250 g buckwheat, ground
- ½ tsp vanilla, ground
- ½ lemon peel, grated
- 3 egg whites
- e.g. butter
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Cream the butter with honey until fluffy, then beat with the egg yolks. Gradually stir in the flour, milk, vanilla, grated zest of 1/2 lemon, salt, and baking powder. Let the batter rest for 30 minutes. Beat the egg whites and fold in. Bake waffles one at a time in a preheated, greased waffle iron. Serve with fruit, fruit sauce, and cream, or with vegetable soup.
