Ingredients for 4 servings:
- 1 m.-large radicchio
- 2 oranges
- 12 green olives, pitted
- 6 sprigs of flat, fresh parsley
- 8 tbsp olive oil
- 4 tbsp balsamic vinegar, dark
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with fresh parsley and olive oil
Wash the radicchio and tear it into bite-sized pieces. Then divide it evenly among the salad bowls. Fillet and finely chop the oranges, reserving the juice. Wash the parsley, remove the stems, and finely chop. To prepare the vinaigrette, place both in a small bowl. Add the olive oil and balsamic vinegar and mix. Season with salt and pepper. Spread the vinaigrette evenly over the radicchio in the salad bowls and then garnish with the sliced olives.
