Grandma's tomato soup

Ingredients for 4 servings:

  • 50 g bacon
  • 2 large onions
  • 1 ½ kg tomatoes
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Few ingredients – lots of flavor

Slice the bacon, roughly dice the onions, wash and roughly chop the tomatoes. Fry the bacon in a large pot over medium heat. Add the onions and sauté until translucent, stirring occasionally. Add the tomatoes and season with salt, pepper, and sugar. Bring to a boil, cover the pot, and simmer over low heat for about 1 hour. Do not add any water; the liquid in the tomatoes is sufficient. Then puree the soup through a sieve (or use a food mill) and season with salt, pepper, and sugar. A dollop of whipped cream goes well with this as a starter. Add pasta to the soup and sprinkle some grated cheese on top to make it a main course. In winter, I replace the fresh tomatoes with 3 large cans of tomatoes. It tastes almost as good.
