Potato and spinach casserole with feta and cashew nuts

Ingredients for 4 servings:

  • 700 g potatoes
  • 400 g leaf spinach, frozen
  • 100 g cashew nuts
  • 200 g feta cheese
  • 100 ml cream
  • 100 ml milk
  • curry
  • pepper
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Peel the potatoes and boil for 15 minutes. Then slice them and place them in the casserole dish. Sprinkle the spinach on top. Toast the cashews and add them to the dish. Then mix the cream, milk, and curry until the sauce turns a nice yellow color. Pour the sauce over the potatoes and finally crumble the feta and sprinkle it on top. Bake everything in the oven at 180 degrees Celsius for 20 minutes.
