Ingredients for 2 servings:

  • 2 cups of cream
  • 1 large onion(s)
  • 1 ½ tbsp cream cheese with garlic
  • 2 tbsp mild ajvar
  • 1 ½ tbsp butter
  • 100 ml vegetable stock
  • 2 tbsp Metaxa
  • 1 tbsp paprika powder, sweet
  • 2 tbsp tomato paste
  • 1 pinch of salt
  • pepper
  • nutmeg
  • Parsley
  • Herbs of Provence

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Greek Metaxa sauce, ideal with baked gyros

Heat the butter in a small saucepan and sauté the diced onions. Season well with Provençal herbs. After about 5 minutes, add the cream and broth. Bring everything to a gentle simmer. Next, add the tomato paste and ajvar. While everything is simmering, add the Metaxa and wait until the alcohol smell disappears. First, stir in the paprika and the garlic cream cheese. Bring everything to a gentle simmer and season with salt, pepper, and nutmeg to taste. Add a little parsley. My version is made with crispy fried, fresh gyros in a casserole dish topped with grated cheese. Tastes delicious.
