Apple muffins

Ingredients for 1 servings:

  • 1 ½ sweet and sour apples (e.g. Boskoop)
  • 150 g sugar
  • 200 g flour
  • 50 g almond(s) hazelnuts ground
  • 2 ½ tsp baking powder
  • 1 egg(s)
  • 80 ml vegetable oil, neutral
  • 225 ml natural yogurt
  • 1 tsp sugar
  • 1 tsp almonds or hazelnuts, ground
  • possibly paper cups

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Super juicy and totally easy! Makes 12 pieces

Combine the sugar, flour, optional nuts or almonds, and baking powder in a bowl and mix lightly. Coarsely grate the apples and set aside. Whisk the egg, oil, and natural yogurt well and add to the dry flour, sugar, and almond mixture. Stir vigorously until a dough forms. Then stir in the grated apples and pour everything into a 12-hole muffin tin. You can also line the tin with paper baking cups beforehand to prevent the muffins from sticking. Next, mix 1 teaspoon of sugar and 1 teaspoon of almonds or nuts and sprinkle this mixture on the muffins. Place the tin in the preheated oven and bake at 180°C (top/bottom heat, fan: 160°C) for about 25 minutes.
