Green asparagus with salmon and horseradish cream cheese

Ingredients for 10 servings:

  • 10 stalk(s) asparagus, green, thin
  • 5 slices of smoked salmon
  • 10 tbsp cream cheese
  • e.g. horseradish, grated
  • e.g. lime juice or lemon juice
  • pepper
  • 5 slices of white bread

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 27 minutes

as finger food or as part of an appetizer plate

Rinse the asparagus spears, peel the lower third if necessary, and blanch in lightly salted water for 2 minutes. Rinse in cold water and pat dry. Trim the asparagus tips and some of the spears and set aside. Chop the rest, mix with the cream cheese, and season with horseradish, lime juice, and pepper. Cut the salmon into strips, place some of the cream cheese mixture in the center, place an asparagus tip on top, and fold over the salmon. Remove the crust from the bread, cut into cubes, and place the salmon parcels on top.
