Ingredients for 4 servings:
- 120 g sushi-quality tuna
- 100 g spinach, fresh
- 2 tsp sesame seeds
- 1 tsp mustard, medium hot
- 40 ml pineapple juice
- 50 ml sesame oil
- 30 ml white wine vinegar, mild
- 1 small garlic clove(s), finely chopped
- some coriander seeds, freshly ground
- Salt
- White pepper, freshly ground
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Small starter in a multi-course menu for 4 people, otherwise intended for 2 people
Freeze the tuna and slice it into wafer-thin slices using a slicer. Wash and dry the spinach and finely chop the garlic. Place the salad dressing ingredients in a screw-top jar and shake well. Place the spinach in a bowl, drizzle all but a teaspoon of the dressing over the spinach, and mix gently. Arrange the spinach in the center of the plate, arrange the tuna slices around it, sprinkle the lettuce and tuna with a little sesame seeds, and drizzle more dressing over the lettuce and tuna.
