Ingredients for 2 servings:
- 100 g goat’s cheese
- 2 slices of toast
- 4 slices of bacon
- ¼ pear(s)
- 1 handful of lamb’s lettuce
- 1 sprig(s) of thyme
- 1 tsp liquid honey
- some pepper
- some powdered sugar

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes
as a starter, therefore with toast instead of burger buns
Form the patties from the bacon and goat cheese. These should be slightly smaller in diameter than the toast circles. To do this, place two bacon slices close together and form about 50g of the cream cheese into a round slice on top of the bacon. Sprinkle the cheese with 1/2 teaspoon each of honey, a little thyme, and pepper. Then wrap the bacon around the patties to create a sealed dish. Place the patties in the refrigerator/freezer while you prepare the remaining steps so that the cheese doesn’t soften and the bacon has enough time to brown while frying. Wash, trim, and dry the lamb’s lettuce, and set aside. Cut the pear into thin slices and dust the cut surfaces with powdered sugar. Toast the bread and cut out circles using an 8cm ring (e.g., a dessert ring). Use a knife or carefully use your fingers to separate the toast circles into top and bottom. Briefly toast the insides again in the toaster or in the oven. Tip: If you don’t have a suitable cookie cutter, use a smaller ring rather than a larger one, as otherwise the bacon would be too short for the patties. Fry the patties in a non-stick pan without any fat until crispy on both sides. Before turning, add the pear slices to the pan and brown them briefly on both sides. Place the cheese patty on the bottom half of a toast circle, then the lamb’s lettuce and pears. Close with the top half of the toast circle and secure with a toothpick. This starter goes well with some lamb’s lettuce with a vinegar and honey vinaigrette.
