Green asparagus and halloumi on toast

Ingredients for 4 servings:

  • 20 stalk(s) asparagus, green, approx.
  • some lettuce leaves
  • 200 g Halloumi, approx.
  • some oil for frying
  • 4 slices of toast
  • 4 tbsp, heaped hummus with green asparagus, su

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Clean the asparagus. Finely chop the lettuce leaves. Slice or strip the halloumi. Heat a little oil and about 50 ml of water in a large pan and cook the asparagus for about 3-4 minutes, first with the lid on and then uncovered, so that the water evaporates. The asparagus should be al dente when cooked, so fry briefly in the oil. Brush the halloumi with oil. Push the asparagus to the side to keep warm and fry the halloumi over high heat on both sides, browning lightly. Meanwhile, toast the slices of bread. Spread a thick layer of asparagus hummus and top with lettuce, halloumi, and 5 asparagus spears each. Variation: Grill the asparagus and halloumi and serve in a burger bun, perhaps with more vegetables and hummus.
