Power pasta with Cabanossi

Ingredients for 4 servings:

  • 150 g Cabanossi
  • 400 g tomatoes
  • 5 stalks of parsley
  • 400 g pasta, e.g. penne or fusilli
  • 1 tbsp olive oil
  • 1 cup sour cream
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

cheap, simple and quick to make

Bring the water to a boil for the pasta and add plenty of salt. While the water is boiling, either slice the Cabanossi thinly or halve them. Wash the tomatoes and, depending on their size, roughly dice them or halve them as well. Wash the parsley, shake dry, and tear it into small pieces. Then cook the pasta in boiling salted water according to the package instructions. Heat the oil in another pot and fry the Cabanossi. Then deglaze with 100 ml of the pasta cooking water and stir in the tomatoes and sour cream. Bring everything to a boil and simmer for about 2-3 minutes. Then season with salt and pepper and stir in the parsley. Drain the pasta and add it to the pot.
