Low-histamine baguette rolls

Ingredients for 4 servings:

  • 250 g spelt flour type 630
  • 100 g wholemeal spelt flour
  • 10 g cream of tartar baking powder
  • 2 pinches of sugar
  • 1 pinch of salt
  • 100 g quark
  • 100 g milk
  • 80 g water
  • Flour for working

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (fan oven) and place an ovenproof dish filled with water on the bottom of the oven. The steam will create a nice crust. Combine both flours with the cream of tartar, sugar, and salt in a bowl and whisk. Add the quark, milk, and water and knead with the dough hook of a hand mixer until you have a smooth, firm dough. Lightly flour your hands, remove the dough from the bowl, and divide it into four equal pieces. Roll each piece between your hands into an oblong baguette roll and place it, leaving some space between them, on a baking sheet lined with baking paper. Bake the rolls for 25 minutes at 200°C (fan oven).
