Ingredients for 6 servings:
- 430 g spelt flour or wheat flour
- ½ cube of fresh yeast
- 170 ml water, warm
- 40 g butter, soft
- 1 tsp salt
- 1 tbsp sugar
- 1 egg(s)
- some milk
- 500 g minced beef
- 1 egg(s)
- 3 tbsp heaped breadcrumbs
- 1 clove(s) garlic, finely chopped
- 1 tsp, heaped mustard
- salt and pepper
- 6 tbsp BBQ sauce (blueberry BBQ sauce, see note)
- 1 handful of baby spinach
- 6 slices of Cheddar
- 2 small onions
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 2 hours 17 minutes
To make the rolls, first dissolve the yeast and sugar in warm water and let stand for a moment. Mix the flour with the salt, then add the softened butter, egg, and yeast mixture. Knead everything into a smooth dough for about 5 minutes (I always use a stand mixer with a dough hook for this). Then, cover and let rise in a warm place for one hour. Then, form the dough into 6 not-too-large balls, place them on a baking sheet lined with baking paper, and flatten slightly. Cover and let rise for another 15 minutes. In the meantime, preheat the oven to 200°C (top/bottom heat). Brush the buns with milk and bake for about 12-15 minutes (depending on your oven). They should only be lightly browned. Tip: The buns can also be prepared the day before. For the patties, mix the ground beef with egg, breadcrumbs, garlic, and mustard. Season with salt and pepper and mix well again. Divide into 6 equal portions and form them into patties. I have a burger press or patty mold, which makes it quick and easy. Peel the onions and slice them into fine, thin rings. Fry in a pan with a little oil until very dark and crispy. Wash and dry the spinach. Cut open the burger buns, brush each with 1 tablespoon of BBQ sauce, and scatter the baby spinach and fried onions on top. Fry the patties in the hot pan for about 0.5-1 minute on each side (depending on the doneness; mine are medium, so they were only cooked briefly). Place a slice of Cheddar cheese on the last side of each patty and Let it melt. Finally, place a patty including cheese on each burger bun and fold it together. It’s a bit time-consuming if you do everything yourself, but it’s definitely worth it.
