Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 2 tsp vegetable oil
  • 50 g mayonnaise
  • 3 tbsp fig mustard
  • 40 g arugula
  • 1 pear(s)
  • 4 slices of goat cheese or goat cream cheese
  • 4 rolls (multigrain rolls)
  • salt and pepper
  • Paprika powder, optional

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Heat the oil in a pan and fry the chicken breast fillets on both sides until cooked through. Season with salt and pepper; add paprika if desired. Mix together the mayonnaise and fig mustard and season with salt and pepper. Wash and dry the arugula, wash the pear, quarter it, and remove the seeds, then cut it into thin slices. Halve the cheese slices crosswise. Cut the multigrain rolls crosswise and toast the halves. Spread each one with the mustard cream, then spread the arugula on the bottom of the roll. Cut the chicken breast diagonally into thin slices and arrange them on the rolls. Place two slices of cheese on each one, along with some pear slices. Cover with the tops of the rolls and serve immediately. The remaining pear can be served on the side.
