Spaghetti with shrimp and squid rings

Ingredients for 2 servings:

  • 400 g spaghetti, preferably whole wheat
  • 150 g shrimp(s)
  • 150 g squid rings or calamari
  • 40 ml olive oil
  • 6 cloves garlic
  • 1 pepper, medium hot
  • 1 small bell pepper(s), red
  • 2 spring onions
  • ½ bunch parsley
  • 1 tbsp lemon juice
  • some lemon zest, organic
  • n. B. salt and pepper, black
  • e.g. Parmesan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the garlic into thin slices and add to the olive oil. Cut the bell peppers, chili peppers, and spring onions into fine strips or rings. Chop the parsley. Cut the squid rings into bite-sized pieces. Add the oil and garlic to a large, deep pan and heat briefly. The garlic should not brown. Add the bell peppers, chili peppers, and spring onions and continue frying until the peppers are lightly cooked but still have a bite. Now add the shrimp and squid rings and finish cooking. Season with salt, pepper, and lemon juice. Meanwhile, cook the spaghetti and then drain. Add about five tablespoons of the cooking water to the pan and stir to combine. Add the spaghetti, some lemon zest, and the parsley to the pan and mix everything well. Grate the Parmesan cheese onto the arranged plates, ideally fresh.
