Noodles with minced beef sauce – national dish of Denmark

Cook the pasta with the stock cubes according to the package instructions. Meanwhile, in a small saucepan, sauté a finely chopped onion in melted butter. Add the ground beef and fry until crumbly. Cook thoroughly until browned. Add 1-2 tablespoons of the pasta water to the meat. Now add ketchup and a little cream—and a little mustard, if desired. Season with salt and pepper. Add the sauce thickener and let everything simmer for about 1-2 minutes. Drain the pasta water and mix the meat sauce with the pasta. Serve hot. Variation: In Denmark, the ground beef is sometimes deglazed with white wine, and the typical Danish “madkulør” (brown food coloring) is also added. You can also add a few carrots or a bell pepper. In my family, we have this dish instead of pasta Bolognese about once or twice a week. After all, my mother is Danish too.
