Ingredients for 4 servings:

  • 750 g mushrooms (Fat Hen or Curly Hen), cleaned
  • Butter or margarine for frying
  • 1 medium-sized onion(s), finely chopped
  • 2 medium-sized garlic cloves, finely chopped
  • 50 g bacon, lean, finely diced
  • 1 few stalks of parsley, chopped
  • 1 cup of sweet cream
  • Salt
  • Pepper, white, from the mill
  • nutmeg

Wild mushroom dish

The fat hen or curly hen is a sponge-like mushroom that grows in symbiosis with pine trees on sandy soil. It has a nutty flavor and a waxy, firm consistency, which largely retains its consistency when cooked. 1 kg of fresh mushrooms (=750 g cleaned) makes a hearty meal for 4 people. Clean the mushrooms under running water. This is easiest if you cut them into bite-sized pieces straight away. Then let them drain in a sieve. Sauté the onion and garlic until translucent, then add the bacon. Add the mushroom pieces and fry over medium heat for 5-8 minutes, then reduce the heat to low and simmer for another 3-5 minutes. Add the cream and reduce the heat to low and reduce the heat for another 5-8 minutes. Season with parsley, salt, and pepper, and finally with nutmeg. This goes well with bread dumplings or hash browns. It also tastes good with pink grilled beef fillet.
