Ingredients for 1 servings:
- 50 g quinoa, raw
- 50 g nuts
- 150 g wholemeal spelt flour
- 50 g coconut blossom sugar or your choice
- 1 egg(s)
- 130 g butter, cold
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 2 minutes
Quickly combine all ingredients except the nuts into a dough and let it rest in the refrigerator for at least 30 minutes. In the meantime, toast the nuts in a pan and let it cool. Then roughly chop them. Roll out the dough on a floured surface and cut out small circles. Sprinkle them with the nuts. Place the circles on a baking sheet lined with baking paper. Bake in an oven preheated to 160°C (convection oven) for about 10-12 minutes on the middle rack until golden brown. This yields approximately 30 circles, depending on the size.
