Ingredients for 2 servings:

  • 350 g flour
  • 190 ml water, lukewarm
  • 15 g yeast
  • 10 g salt
  • 10 ml olive oil
  • 1 pinch(s) of sugar
  • 3 figs
  • 150 g goat cheese
  • 2 balls of mozzarella
  • 2 tbsp honey
  • 2 sprigs rosemary

For the pizza dough, knead the flour, yeast, olive oil, salt, sugar, and water for about five minutes. Let it rise in a warm place for 45 minutes, then let it rest in the refrigerator for two days. Alternatively, if you need it faster, use about half the yeast and let it rest in a warm place for 2.5 hours. Preheat the oven to 250 degrees Celsius (480 degrees Fahrenheit) for pizza, or alternatively, use a pizza stone if available. Roll out two pizzas thinly to about 30 cm in diameter. Cut the mozzarella, figs, and goat cheese into thin strips and top the pizza with them. Bake the pizza for about eight minutes, until the cheese is golden brown. Drizzle with honey and rosemary before serving.
