Cheese – Sherry – Butter

Ingredients for 6 servings:

  • 50 g mountain cheese, firm, in one piece
  • 50 g Parmesan
  • 30 g blue cheese, mild
  • 125 g butter, soft
  • Pepper, black from the mill
  • Paprika powder, sweet
  • 2 tbsp sherry, dry

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quickly prepared in the food processor, with bread and an aperitif a great start to a meal

Finely grate the mountain cheese and Parmesan cheese (using the fine grater). Push the cheese slightly to the side and carefully insert the knife. Add the blue cheese and butter, season with pepper, paprika, and sherry, and blend thoroughly (briefly on low speed, then for about 1 minute on high). Roll the butter into a log and wrap it in foil in the refrigerator to set.
