Diet – Potato Salad

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 bag of salad seasoning mix (salad topping, garden herbs or paprika)
  • 400 g potatoes
  • 1 small onion(s)
  • 150 g natural yogurt 0.1% (1 small pot)
  • 3 tbsp mineral water
  • salt and pepper
  • chives
  • Balsamic vinegar, white

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the cucumber, cut into small cubes, sprinkle with salad dressing, and set aside. Boil the potatoes in their jacket potatoes. Peel and slice or dice them. Finely dice the onion. Chop the chives into small rings and set some aside. Add the potatoes, onion, and chives to the now-soaked cucumbers. Pour the yogurt mixed with mineral water over the cucumbers and mix everything gently. Season with pepper, salt, and vinegar. Serve in a bowl and sprinkle the remaining chives on top. This makes two large portions, and we’re pretty stuffed!
