Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) (or turkey breast fillet)
  • 500 g vegetables of your choice (frozen or leftovers from the day before)
  • 2 onions
  • 1 garlic clove(s)
  • 150 ml broth
  • 300 ml coconut milk
  • 1 tsp curry paste, yellow
  • e.g. curry powder
  • Paprika powder
  • salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the chicken breast fillet into bite-sized pieces and sear on all sides in a pan with hot oil. Season with salt and pepper, and set aside. Finely dice the onions and sauté them in the remaining oil along with the crushed garlic. Add the curry paste and stir to combine. Add the vegetables and fry briefly. Deglaze with stock and simmer for a few minutes. Then add the previously seared meat, stir in the coconut milk, and season to taste. Serve with rice or noodles.
