Chanterelles à la Creme

Ingredients for 3 servings:

  • 500 g chanterelles
  • 3 shallots
  • 1 garlic clove(s), pressed
  • 1 tbsp butter
  • 200 ml cream
  • Salt and pepper, white
  • 1 tbsp parsley, freshly chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rinse the chanterelles and pat dry. Leave smaller mushrooms whole and slice larger ones. Peel and finely chop the shallots and garlic. Heat butter in a pan. Add the chanterelles and fry over medium heat until they no longer release any liquid. Add the shallots and garlic and sauté until translucent. Deglaze with cream and simmer for 2-3 minutes over medium heat. Season with salt, pepper, and parsley. Serve with thin ribbon pasta or baguettes.
