Colorful egg salad

Ingredients for 4 servings:

  • 8 eggs
  • 2 apples, peeled, pitted
  • 2 red bell peppers, cleaned
  • 2 onions, peeled
  • 2 gherkins
  • 2 tbsp capers
  • 8 tbsp oil
  • 3 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp mustard
  • 1 tsp mayonnaise
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Hard-boil the eggs and cut them into eighths. Chop the apples, bell peppers, onions, gherkins, and capers and add them to the eggs. Mix the oil, lemon juice, vinegar, mustard, and mayonnaise well and season with salt and pepper. Pour the marinade over the salad and let it marinate well.
