Baked beetroot

Ingredients for 4 servings:

  • 1 pack of beetroot, pre-cooked
  • 50 g butter, soft
  • 2 garlic cloves
  • ½ tsp lemon juice
  • 1 tbsp breadcrumbs
  • Parmesan, grated
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the beetroot in a baking dish and make several deep cuts, about 0.5 cm apart. Peel and press one garlic clove, and mix with the butter. Season with lemon juice, salt, and pepper. Spread half of this mixture into the cuts in the beetroot. Peel the second garlic clove and slice it. Mix the remaining garlic butter with the breadcrumbs, cheese, and garlic slices and scatter them in flakes over the beetroot. Season again with salt and pepper. Bake in a preheated oven at 200°C for about 20-25 minutes. Serve hot.
