Baked stuffed mushrooms with spinach and feta cheese

Ingredients for 4 servings:

  • 8 large mushrooms
  • 2 shallots
  • 300 g spinach (fresh or frozen)
  • 1 pack of sheep’s cheese
  • 1 cup sour cream
  • 2 garlic cloves
  • nutmeg
  • salt and pepper
  • some butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brush or wash the mushrooms and scoop out the insides with a teaspoon. Preheat oven to 180°C. Mash the feta cheese with a fork, press the garlic, and mix both with the sour cream. Finely dice the shallots and roast them in butter until golden brown, then add the spinach and season (with nutmeg if you like). Season to taste. Now fill the mushrooms first with the spinach and then with the feta cheese cream. Place in the oven (on baking paper) for about 15 minutes. As a suggestion: it’s also delicious with bacon.
