Sarah's pasta salad

Ingredients for 4 servings:

  • 400 g pasta (farfalle)
  • 1 stalk(s) leek
  • 450 g broccoli
  • 4 small spring onions
  • 1 clove(s) garlic
  • 1 bell pepper(s), red
  • ½ bunch chives
  • ½ bunch basil
  • 4 tomatoes, dried
  • 60 g Parmesan, grated
  • 1 tsp mustard
  • 5 tbsp balsamic vinegar
  • 12 tbsp olive oil
  • salt and pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with broccoli and dried tomatoes

Cook the pasta in salted water according to the package instructions until al dente, then drain well and place in a bowl. Trim the broccoli, divide it into florets, wash it and also cook it in salted water until al dente. Then drain, drain and add to the pasta. Trim the spring onions, peel the onions and cut them into thin rings along with the trimmed leek. Also add to the pasta. Peel the garlic, press it and add it. Trim the bell pepper and dice it, then add it. Wash the chives and basil, cut the chives into rounds and finely chop the basil. Also add to the pasta. Drain the sun-dried tomatoes, cut them into thin strips and add them. For the dressing, mix the mustard and balsamic vinegar and add the olive oil, stirring constantly. Season with salt, pepper and sugar and pour over the salad. Stir well again, add the Parmesan and stir once more.
