Mandorlini almond biscuits

Ingredients for 1 servings:

  • 200 g marzipan paste
  • 150 g almonds, ground
  • 10 g vanilla sugar
  • 80 g powdered sugar
  • 100 g wheat flour type 405
  • 7 g baking powder
  • 1 egg white
  • 1 tbsp Amaretto
  • 50 g almond flakes for rolling
  • Powdered sugar for dusting

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Grate the marzipan very finely and knead it with the remaining ingredients. Form the dough into approximately 20 balls, roll them in the almond flakes, and press them down lightly. Place the mandorlini on a baking sheet lined with baking paper. Bake at approximately 180°C (top/bottom heat) on the middle rack for 13-15 minutes, until golden brown. Let the pastries cool slightly and dust with powdered sugar.
