Ingredients for 4 servings:

  • 600 g strawberries or other berries
  • Juice (strawberry juice or other fruit juice)
  • 20 ladyfingers
  • 3 eggs
  • 250 g mascarpone
  • possibly cocoa powder

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

A French woman’s recipe

Separate the eggs and beat the egg whites until stiff. Whisk the egg yolks with the mascarpone until smooth, then fold in the beaten egg whites. Toss the sponge fingers in juice on both sides and line a shallow dish. Arrange a layer of chopped strawberries on top. Then add a layer of mascarpone cream, then soaked sponge fingers, then the remaining strawberries, and finally the remaining mascarpone cream. Dust with cocoa powder and refrigerate for at least 4 hours.
