Turkey schnitzel with spinach and feta topping

Ingredients for 2 servings:

  • 2 turkey schnitzels
  • 150 g leaf spinach
  • 1 piece(s) garlic
  • 1 small onion(s)
  • 150 g feta cheese
  • salt and pepper
  • nutmeg
  • Flour
  • Oil for frying
  • Paprika powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Wash the turkey schnitzels and pat dry with kitchen paper. Season the meat with pepper and salt and coat in a little flour. Briefly fry in a hot pan with a little oil until the schnitzels are lightly browned. In the meantime, trim the spinach and finely dice the onion and garlic. Remove the schnitzels from the pan and place them side by side in a shallow, ovenproof dish. Preheat the oven to 200 degrees top and bottom heat (180 degrees fan-assisted). Sauté the spinach leaves in the schnitzel pan for 3-5 minutes, then add the onions and garlic. Once the spinach has wilted, season with salt, pepper, and nutmeg. Let it sit for a while. Slice the feta cheese. Spread the steamed spinach leaves over the schnitzels, cover with the feta slices, sprinkle with a little paprika, and bake on the middle rack for 12-15 minutes. Serve with French fries.
