Simple vegetable soup

Ingredients for 4 servings:

  • 1 can peas and carrots, drained
  • 1 bunch of spring onions
  • 1 ½ kg potatoes
  • 1 liter vegetable broth
  • 1 pinch of nutmeg
  • 1 pinch(s) of pepper
  • 1 shot of oil
  • 1 pinch(s) paprika powder
  • ½ bunch parsley
  • 1 point sausages (Mettenden), sliced
  • e.g. sausages (Wiener)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and cut into bite-sized pieces. Trim the spring onions and slice them into small rings. Add a splash of oil to a large pot and sauté the onions. Then add the potatoes and fry them together with the Mettenden sausages until crispy. Next, add the stock and let it simmer over medium heat until the potatoes are tender (you can also cook them until floury). Then add the can of peas and carrots. Simmer the whole thing for another 15 minutes. Season to taste. Finally, chop the parsley and add it, then simmer for another 5 minutes. Serve with a tasty Vienna sausage. Total cooking time: 1 hour
