Jersey Pride Chocolate Chip Cookies

Ingredients for 1 servings:

  • 225 g butter, room temperature
  • 200 g sugar
  • 150 g brown sugar
  • 4 eggs, size L
  • 1 ½ tbsp vanilla extract or 1 tbsp vanilla sugar
  • 1 tbsp lemon juice, freshly squeezed
  • 310 g wheat flour type 405
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 75 g oat flakes, not instant flakes
  • 280 g dark chocolate, coarsely chopped
  • 175 g walnuts, coarsely chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Set the oven to 160 degrees Celsius (convection oven). Line several baking sheets with parchment paper. In a large mixing bowl or in the bowl of a KitchenAid or similar, cream the butter with both types of sugar until creamy. Gradually add the eggs, one at a time, beating thoroughly after each addition. Also add the vanilla extract and lemon juice and mix. Sift together the flour, baking powder, cinnamon, and salt and add to the ingredients in the work bowl at low speed. Ensure the mixture is smooth. Then gently stir in the oats, chocolate, and nuts until completely blended. Drop heaping tablespoons of cookie dough onto the prepared baking sheets, spacing them 5 cm apart. Bake the cookies in the preheated oven for 12 to 15 minutes, until the cookies are cooked through in the centers and are a light golden brown. Let the cookies cool on a wire rack. This recipe yields 36 cookies.
