Oatmeal cookies with raisins

Ingredients for 1 servings:

  • 250 g butter or margarine
  • 220 g brown sugar
  • 120 g sugar, white
  • 2 eggs
  • 1 tsp vanilla flavor
  • 230 g flour
  • 0.8 tsp baking soda
  • 1 tsp cinnamon powder
  • ½ tsp salt
  • 300 g oat flakes, wholegrain
  • 300 g raisins

Working time approx. 30 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 43 minutes

Warm the butter (or margarine) to room temperature. Preheat the oven to 180°C (top/bottom heat). Beat the butter with a hand mixer for about 2-3 minutes until creamy and white. Add the brown and white sugars and mix well with a mixer. Then add the eggs, one at a time, and mix in. Then add the vanilla extract. In a separate bowl, thoroughly mix the flour, baking soda, cinnamon, and salt, then add to the butter, sugar, and egg mixture. Stir with a wooden spoon until smooth. Add the oats and raisins and stir in. Shape each ball into a ball, about 2 tablespoons, and place on a baking sheet lined with parchment paper, leaving plenty of space between each ball (no more than 12 balls on a regular-sized baking sheet). Bake one sheet at a time in the hot oven at medium temperature for 12-13 minutes. Remove from the warm baking sheet as soon as possible and let cool on a cooler surface or wire rack. Tip: The raisins can also be replaced with cranberries or chocolate drops.
