Celery schnitzel with feta topping

Spread the love

Ingredients for 2 servings:

  • 1 half celeriac, approx. 15 cm diameter
  • 150 g feta cheese
  • Fat for frying, possibly half butter, half rapeseed oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 23 minutes

super simple, vegetarian treat

Peel the celery and cut into slices about 1 cm thick. Heat the fat in a non-stick pan (the pan should have a lid) and set it over medium heat (!). I particularly like using a mixture of butter and vegetable oil, but that’s up to you. Add the celery slices and fry slowly, uncovered. When turning, season the cooked sides with salt and pepper (this helps the pieces stick). The whole frying process takes me about 15 minutes, by which time the slices are nicely cooked, lightly browned, and crispy. Then place the sliced feta cheese on the celery, put the lid on the pan, and cook for another 3 minutes. I really enjoy this dish with mashed potatoes or fried potatoes and salad. I also think it’s delicious cold, for example, on a slice of white bread.
