Pumpkin fritters with feta

Ingredients for 4 servings:

  • 1 kg pumpkin flesh
  • 4 tbsp flour, heaped
  • 250 g feta cheese
  • 3 eggs
  • ½ bunch of dill
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

If necessary, peel the pumpkin, then remove the seeds and finely grate it. Add a little salt and let it sit in a bowl for about 20 minutes. Squeeze the grated pumpkin well and drain the water. Coarsely grate or crumble the cheese. Pour the flour, cheese, beaten eggs and chopped dill over the grated pumpkin and mix everything together. Season with salt and pepper. The mixture should be moist but still pliable; if not, thicken with a little more flour. Heat oil in a pan. Using a tablespoon, scoop out portions of the dough, flatten them in the pan and fry on both sides until they form fritters. Serve with salad as a main course or as a side dish.
