Colorful potato – vegetable – pizza

Ingredients for 4 servings:

  • 1 kg potatoes
  • 120 g sour cream
  • 2 tbsp flour
  • 4 eggs
  • 1 tbsp chives
  • 1 tbsp parsley, chopped
  • salt and pepper
  • 4 tbsp tomato paste
  • 4 tbsp mustard, medium hot
  • 2 bell peppers, red and green
  • 200 g mushrooms
  • 1 bunch of spring onions
  • 100 g corn
  • 160 g cheese, grated
  • Thyme
  • oregano

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Grate the potatoes and mix with 90g sour cream, flour, eggs, chives, and parsley. Season the potato mixture with salt, pepper, thyme, and oregano. Spread on a baking sheet and bake at 200°C (preheated) for about 20 minutes. Mix the tomato paste, mustard, and remaining sour cream. Season with thyme and oregano and spread on the pizza base. Chop the vegetables. Spread everything on the pizza base, sprinkle with cheese, and bake in the oven at 180°C for about 20 more minutes.
