Gingerbread croissants

Ingredients for 50 servings:

  • 1 pt. gingerbread spice
  • 200 g flour
  • 200 g butter or margarine
  • 150 g ground almonds
  • 125 g powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Set aside 1 teaspoon of gingerbread spice. Knead the flour with the remaining gingerbread spice, fat, almonds, and 100g of powdered sugar into a smooth dough. Wrap the dough in foil and chill for 1 hour. Shape the dough into 3 rolls, each 25cm long. Cut into approximately 1.5cm long pieces and shape into croissants. Line a baking tray with baking paper and place the croissants on them. Bake in a preheated oven at 190°C (gas 2-3, fan oven 170°C) on the second shelf from the bottom for 12-14 minutes, then let cool on the tray. Mix the remaining powdered sugar and gingerbread spice and sift over the croissants.
