Ingredients for 1 servings:
- 130 g spelt flour
- 85 g oat flakes
- 1 pinch of salt
- ½ tsp baking powder
- ¼ tsp baking soda
- 115 g butter, soft
- 130 g sugar
- 1 tsp vanilla extract
- 1 egg(s)
- 100 g chocolate shavings
- 100 g currants

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Berry cookies for summer
Cream the butter with the sugar. Stir in the egg and vanilla extract. In a small bowl, combine the flour, oats, chocolate chips, salt, baking powder, and baking soda. Briefly stir the dry ingredients into the butter, sugar, and egg mixture. Scoop out small portions of the dough (either with a teaspoon or your hands) and place them on a baking sheet lined with parchment paper. Press a few currants into each cookie (alternatively, the currants can be carefully folded into the batter at the end with a spatula to ensure they are evenly distributed, but this will quickly make the cookie sticky and not crispy after baking). Bake in a preheated oven at 180°C (top/bottom heat) for about 13-15 minutes. Cool on a cooling rack or enjoy immediately. Store leftovers in tins! Makes about 30 cookies.
