Macaroni with spinach and meatballs

Ingredients for 4 servings:

  • 300 g spinach, fresh or frozen
  • 250 g tomatoes, ripe
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 300 g macaroni
  • 3 tbsp olive oil
  • 250 g sausage meat
  • 250g mozzarella
  • 3 tbsp butter
  • 1 tbsp parsley, chopped
  • Salt and pepper from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Clean the spinach. Cut the tomatoes into small pieces. Peel and finely chop the onion and garlic. Cook the macaroni in plenty of water with 1 teaspoon of salt until just cooked through, then drain. Sauté the onions and garlic in hot oil in a pot. Add the spinach and tomato pieces, season with salt and pepper, and braise briefly. Form the sausage mixture into 20 dumplings and let them simmer in boiling salted water for about 5 minutes. Slice the mozzarella, then add it to the pot with the macaroni, meatballs, and butter and mix everything together. Preheat the oven to 200°C and bake the pasta mixture for about 20 minutes. Sprinkle with parsley to serve.
