Ingredients for 4 servings:
- 800 g floury potatoes
- 150 g Cheddar cheese, grated
- 60 g fried onions
- 125 g bacon cubes
- 200 g sour cream
- 150 ml milk
- 2 tbsp butter
- salt and pepper
- possibly fresh, chopped herbs, e.g. parsley, chives, thyme
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes
Boil the potatoes with their skins on in salted water for 35-40 minutes, depending on their size. Then rinse well, peel, and mash with a potato masher or press through a potato ricer. Stir the fried onions, butter, sour cream, milk, 100g of the bacon bits, and 100g of the Cheddar cheese into the potato mixture. If desired, you can also stir in herbs, such as parsley or chives, depending on your taste. Pour the mixture into a greased casserole dish and spread evenly. Then scatter the remaining cheese and bacon bits on top. Bake the casserole at 200°C (top/bottom heat) for about 30 minutes, until the cheese is slightly browned. You can also turn on the grill for the last 5 minutes; this will brown and crisp the cheese faster. The casserole can be eaten as a main course; it will then make about 4 servings. As a side dish, it would serve at least 6.
