Oven-baked gnocchi with mushroom and minced meat sauce

Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 250 g mushrooms
  • 3 tbsp olive oil
  • 600 g gnocchi
  • 500 g minced meat
  • 200 g pesto, red
  • 100 g whipped cream
  • salt and pepper
  • 50 g Parmesan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Slice the spring onions into rings. Halve the mushrooms and grate the Parmesan cheese. Preheat the oven to 200 degrees Celsius (convection oven). Heat 2 tablespoons of oil in a pan and fry the gnocchi, turning occasionally, for 3-4 minutes until golden brown, then remove. Heat 1 tablespoon of oil in the frying fat and fry the minced meat until crumbly. Add the spring onions and mushrooms and fry, then season with salt and pepper. Stir in the pesto and cream and bring to a boil. Stir in the gnocchi and season to taste. Transfer everything to a baking dish and sprinkle with the Parmesan cheese. Bake in the hot oven for 6-8 minutes.
